Catch shrinkage before it gets expensive
BevoraX compares what sales and recipes say should have been used with what the stock count shows. The difference gets a number, a product and a location.
The problem
At month end the cost of goods is off, but nobody knows why. Was it over-pouring, breakage or stock walking out the door? Without expected vs actual per product, it stays a hunch.
How BevoraX solves it
Shrinkage analysis
Expected usage from sales and recipes against counted stock, per product with its share of usage. Fill-level losses get their own column.
Shrinkage alerts
When a product's shrinkage exceeds your threshold, a warning appears on the dashboard, and by email if you want.
Breakage tracked separately
Book broken bottles as breakage. It does not count as unexplained shrinkage and does not distort the analysis.
Revenue, margin and spend
Revenue and margin against the previous period, top products, usage per product, stock value per category and spend per supplier.
How it works
- 1
Record sales
Sales and POS reports deduct ingredients via recipes. That is your expected usage.
- 2
Count
The stock count provides actual stock.
- 3
Analyse
The shrinkage analysis shows the difference per product and location for the chosen period.
Worked example
Shrinkage rate of one product
- Expected usage from sales: 30 bottles of vodka 0.7 l
- 21.0 l
- Additionally missing at the stock count
- 0.84 l
- Shrinkage relative to usage
- 4%
At €8,000 cost of goods per month, cutting shrinkage by just 2 percentage points adds €160 gross profit, more than the Pro plan costs.
Frequently asked questions
What is shrinkage in hospitality?
Stock that is missing without a sale, recipe or entry to explain it. Typical causes are over-pouring, unrecorded drinks, breakage and theft.
How does BevoraX calculate shrinkage?
From expected stock, based on deliveries, sales and entries, and the counted stock from the stock take. The difference is set against the product's usage.
Can I see reports per location?
Yes. Reports show a single location or all of them, for the chosen period.
Are breakage and shrinkage kept apart?
Yes. Breakage is recorded separately. It counts toward usage, but not as unexplained shrinkage.
